If it really is caused by overheating, shouldn't replacing the thermal paste under both heatspreader and heatsink get rid of the YLOD forever (or at least for a long time), since the cause of overheating is the thermal paste drying out (and that most people just replace the paste on the heatsink, not fixing the issue)?

just replacing the thermal paste is not enough, reflowing sometimes damages thermal sensors, causing your system to overheat and YLOD comes back in a few weeks, even days. Also, the problem isn't that you got YLOD, the real problem is that some FAT models have bad cooling system, due to badly projected hardware/cooling system... expecially the backward compatible models. Fixing Ylod and changing the thermal compound does not change the fact that the fan does not spin fast enough : )
