ReactPSN 2.10 generates this by looking at the installed (trial) or (demo) version, then applying some tricks, and your ps3 generates the edat all by itself as a result. It works for 99% of the trail/demo versions out there. Start 2.10 and hold circle, wait for the magic, then ftp with multiman to check the home/exdata folder for the user you did this with. Should be a bunch of edat's there..
For PS1 games, these usually come with 'iso.bin.edat' already present in the 'cracked' PKG and can be played on 4.0 as well. How they generated those edat files is unknown, ReactPSN can't do that (yet.. there's a counter that says ps1/edat, but it never generated any ps1 files for me..). I tried with versions of Xenogears and Castlevania:SOTN (i own these games) and the pre-patched ones you can find on certain sites work fine on 4.0.. so there's at least someone who knows his stuff and can generate iso.bin.edat files for ps1 classics.

It doesn't work like that. Someone needs to generate a valid iso.bin.edat for it and repackage it into pkg. Maybe if you look around, on some iso forum, you could find a pre-packaged backup (Final Fantasy 7 is NPUJ94163 by the way..)
