Well that's a two part question.
1. If you want to play games like you did on you're CEX, than you need to downgrade to 3.55dex and then install a 3.55dex firmware with peek poke.
Then backups will run the way you where used to on a regular CFW.
Newer games (3.60+) need to be patched for 3.55 otherwise they will not work because there is no DEX firmware higher than 3.55 with peek/poke.
2.Games for 3.60+ firmware only work on higher DEX firmwares if Sony released an official patch for that game.
So to play games like lets say 'Sleeping Dogs' you need to :
Update you're PS3 to 4.21 DEX
Download the gamepatch on you pc using PS3GameUpdater.
Unpack the gamepatch on your PC using PKGview and repack it for DEX using psn_pakage_npdrm.exe
Install that repacked gamepatch on your dex console using 'install packages' on your XMB.
Then use PS3gen on your pc to Build an image of the game on an external hdd or pendrive.
(You have to format the drive using the option under 'Debug settings' on your ps3 giving you 1 partition to put a game on, or format the drive using ps3gen on your pc, giving you 4 partitions to put games on)
Once the image is build, insert that usb drive into the right usb slot(usb000)on your ps3 and restart the console. The game should appear where normally the disk icon is.
I know it seem little complicated at first, but its accually quite simple once you've don it a few times.
Hope this helps a bit.
Edit: Using MMdm gamemounter only works for games that are 3.60 or below and the game does not appear where the disk icon is. They work only true '/app_home'.
