Q1: Open your dump in a hex editor (HxD for example) and search for "00 00 00 01 00 82 00 01" as hex-values. If you find it, that's a DEX dump.. If not, CEX.

Q2: I haven't tried it, but including "metadata_db_hdd" file in dev_hdd0/mms/db and "rebuild database" from recovery after transfers might solve that, although there's a good chance it won't. You'll likely need to re-install PKGs.
