I wouldn't advise overclocking a PS3 fat...it takes modding just to keep them from overheating at stock speed. Heck, I had to run my fan at 99% sustained just to keep the cell in my 40GB model at 44C in a 25C room...and that was just idling at a menu.

As for the slims, the Cell processors in those are probably capable of higher speeds...but not without much, much better cooling than is provided with the stock fan at top speed.
