So the QA Flag downgrade is the official way Sony uses to downgrade consoles to particular firmware huh. Just wanting to know.

We already knew you can't set the QA flag from firmware 3.61+

They would use their official Jig kit for that.

when I try to update to 3.55 kmeaw, it apears that is FW 2.17 :s, it have something to do with QA_Flag_extra?

My crystalball says no. anyways a quick Google search will tell you all you need to about jail breaking one. if you are going to ask a question like that provide a little more info(i.e what firmware you are on). 3.55 or lower yes 3.56+ or higher NO!!!

Did you end up on 2.17FW?? Update from the XMB, not recovery mode. If you must update from recovery mode make sure that there is no PS3 game in the drive because the flag looks to the bluray drive first for a firmware, then the usb.
