Does anyone know if you can change the gamecode of an EBOOT.BIN to another?

like from:
NPXX00000-USA-000
to
NPXX00000-EUR-000

are you meaning change the region of a game. example

if that is what you are refering to then yes you can.

you will need to change the folder name. replace the eboot, param.sfo and a couple of other files.
this is just for refrence but you will get the idea.

Like was stated above you want to change region i.e. geam id. get sfo editor. And then load which sfo you want to change and edit it with sfo ediot. If futher help is needed you can pm me.

I can do that thing with the SFOs but my point is that I need also to change the code in the header of the EBOOT.BIN for it to work, which I don't know how to do it. Is it ok to do it by just changing it in a Hex Editor?

always worth a try. the worst will happen is the game wont boot.

No, it will cause a corrupt data which would need me to delete the contents of the folder and the folder itself would not be able to get deleted unless i enter the recovery mode and restore my data, which is not worth the risk.
