This is normal. Since you updated to 3.73, the syscon was updated with new hashes aswell preventing 3.56 from running.
Flash 3.73, boot console and use the MinVerChk PUP. If it says minimum version is 3.56, get JFW DH.

Syscon is a CPU that handles the boot process or the PS3. It stores hashes on its EEPROM and 3.55+ checks those hashes and compare them with the lv2 hash in the NOR/NAND.

You cannot manually flash the syscon. The syscon is modified during firmware update and 3.56+ syscon will not accept 3.55 or lower syscon patch, hence the brick if the 3.55 lv1 hash checks are not patched.

I just restored my console.
I make it so:
1. copied asecure_loader,eEID,cISD,cCSD,cvtrm,bootldr from my 3.56 dump into 3.73 dump from different console.
2. then I copied ROS1 (3.73) of 3.73_dump to ROS0 (3.66) of 3.73_dump, then I copied ROS1 (3.56) of my_3.56_dump to ROS1 3.73_dump.

I flash maked dump and console boots correctly!

And now: I have 2504A 1A console with 3.73 firmware. unDowngradable. It has 3.56 factory firmware "2F 5B" on 0xFC0002 and 0xFC0012.

Congrats, now you should get JFW DH on it, it should work since it is based on 3.56.

sadly, JFW DH can only be installed on 3.55 and you cannot reflash fw on jfw. you have to downgrade once more if you want to reflash the jfw.

one thing DH have done well is, that this JFW runs with or without blueray drive fine and you can start everything. i tested it without connected blueray and all my apps still run. also they applied lv1checksoff, so no brick if you were on higher ofw. on the other hand it bricked 2 times on me, one with rsod and the other i've tried to mount devfast and then brick.

another thing i also like about it, the yellow light instead of green power light and you can start service mode with a pkg and exit it on 3.56 jfw. they also implemented some bootloader to flash fw updates directly before ps3 boots.

I told you, it's because of the lv1 hash checks that 3.56 wouldn't run on your console. 3.56 OFW checks hashes, find 3.73 hashes, compare them to 3.56 ones, and the rest is self-explanatory.

Since JFW DH is meant to be installed with a flasher and on 3.56, it obviously has those checks disabled so it will work on your console.
