2. Ahhh And If I install 3.55 OFW over CFW Wouldn't the PS3 say it already has 3.55 firmware??

if it says it already has 3.55 then you will need to flash thru recovery menu. also i dont think it will rebuild database and restore files.

1, nope: it wont.
2, nope: you can "restore" your 3.55, the ps3 wont know the difference.

I Didn't Found an Answer for this at the tutorial

When I will do the update I select - System Update and after that I must select from where or the ps3 will find automaticly the CFW/OFW on the USB Stick ?? Answer me because i dont want my ps3 to update it from iternet and have a 4.21 console

Just choose update from removable media / or usb or hdd / or whatever it says after you click update. ... infact turn your wifi off just to make sure you dont make a mistake!
