I like games that can be open world like Fallout especially Skyrim and games like Dark souls , Demon's souls and such can you suggest some Nice ps3 games that can still be played for hours even after you finish the story?

Arkham city is pretty good (obviously not as huge as skyrim) but it can be clocked by about 40% (60% of the game is side missions and secrets) and there are 400+ riddler trophies/puzzles to smash, plus 7 DLC packs.

I usually play puzzlers/FPS games.

I can recommend Portal 2 VERY highly, BF3, killzone 3, From Dust, saints row the third is decent.

Batman is the most recent game I am playing, and I have no complaints with it so far, finished it once

yes Dragon age origins and Dragon age 2 very good games, ((RPG)) and wide open ,,

I totally forgot to mention this game, but Red Dead Redemption and Undead Night mare are amazingly great games!
