Datecode to know if you can perform downgrade. It's the last 2 digits that appears on the sticker on your ps3.
For example mine: CECH2501A

E3 flasher:

Hardware flasher that you have to install in your PS3 in order to perform downgrade.

Oh yea mine is CECHH03 is the E3 flasher on this site and once its jail broken will I be able to load games from external HD?

Yours is a fat model ps3 so you are good. All fat models can be downgraded. E3 flasher is a hardware flasher that you install inside your ps3. It read/writes to your onboard nor.

Yes (some of them) you can also run Homebrew among other awesome things or do DEX conversion.

Ok so its the E3 flasher that will downgrade is that the only way to do it or is there any sort or flashable files that downgrades as well?

No, can only use hardware flasher since your on 4.10fw
