Just wondering if we have a way to switch default backups while on the PS3 or do we need to connect it to the PC and use something like BDEmu Partition Tool each time we want to switch games?

You need to build for once a connection between Target Manager and your PS3.
Your PS3 needs to be connected with a cable to the internet.
Then you can switch the Games with the latest Multiman version and set your default game from there.
With Open BDEMU Manager is it possible to add/remove slots.
