Hey, have a look at gliitches awesome xmb, he has included a download so you could have a mess around there to figure it out. Its changes files in the dev_flash folder tho so be careful, am not sure if you can do any lasting damage but make sure you read everything you can on it before you try it.

you can use my guide on removing unwanted icons.
It can be found here: http://www.ps3hax.net/showthread.php?t=25919 Although getting the look the same as in the video would require you mess with another file, my method should push you in the right direction, and best part is you can't really brick your system using my method, if you mess up just reinstall the firmware and all is good. If you would like me to explorer into how to make the XMB like the one in the video mention so and I will give it a shot and write a guide if I am successful.
